INGREDIENTS

1 tbsp olive oil
1 onion
2 minced garlic gloves
3 celery sticks
2 carrots
5 potatoes
1 teaspoon Italian seasoning (Simply Organic – Italian seasoning)
1 teaspoon Pepper (Simply Organic – Coarse Black Pepper)
1 teaspoon Red Pepper (Simply Organic – Crushed Red Pepper)
Salt
1 bay (Simply Organic – Bay Leaf)
32 Fl Oz vegetable broth (Pacific Foods – Organic Vegetable Broth)
1 teaspoon Red Pepper or Chilli Flakes (optional) (Simply Organic – Crushed Red Pepper)

INSTRUCTIONS

First, chop the onion and the garlic into small pieces. Cut the celery sticks, the carrots, and the potatoes bigger into about bite size pieces.

Heat olive oil in a pot and add all the vegetables, the Italian seasoning, pepper, and salt. After cooking for about 5 minutes pour in the vegetable broth, add the bay leaf and bring to a boil. Once boiling, reduce heat, cover, and let simmer for 20 minutes. Pour about half of the pot in a blender to be blended and leave the other half unblended. After blending half of the content mix back together in the pot and optionally add crushed red pepper for additional spice. Enjoy!
