A truly sublime dish in all it’s simplicity: Pasta with rocket and baked tomatoes!
When you don’t feel like cooking, make sure you prepare this first course – with few calories but lots of taste. The combination of rocket and parmesan flakes has always been a winner if we then combine it with good durum wheat pasta and sweet baked cherry tomatoes, cooked just to the point of maintaining all their flavour.
In this case the rocket is used as if it were spinach leaves, and it’s slight bitterness goes well with the sweetness of the tomatoes.
