A restaurant style preparation of a yummy and tasty prawn tomato spaghetti pasta!

Ingredients:

Tomatoes – 6 nos
Spaghetti pasta – 350 g
Prawns (cleaned and washed) – 300 g
Olive oil – 3 tbsp
Garlic – 8 cloves
Spring onions – 1 bunch
Pepper powder – 1 tsp
Red chilly powder – 1 tsp
Dry mixed herbs – 1 tsp
Red chilli flakes- 1 tsp
Country/palm sugar – 1 tbsp
Kashmiri chilly powder – 1 tbsp
Half a lemon
Salt to taste
Water as required

Preparation:

1. Slit the tomatoes on one side and blanch them in boiling water.
2. One blanched, remove the tomatoes from the boiling water and drop them into ice cold water. This helps the tomato skin to peel off easily. Allow it to cool and remove the tomato skin.
3. Add the tomatoes to blender and grind them to a smooth paste.
4. In a sauce pan boil water with 1 tbsp of salt. Add in 1 tbsp of olive oil to enable the pasta to not become sticky.
5. Cook the spaghetti pasta in the boiling water. Make sure not to overcook the pasta. (Follow the instructions given in the pack)
6. Reserve some pasta cooking water for later.
7. To a sauce pan, add in 2 tbsp of olive oil and sauté the chopped garlic cloves.
8. Once the garlic starts to get some color add in the chopped spring onions (pale part) and sauté well.
9. Add in the blanched tomato paste and sauté it.
10 Add in the pepper powder, red chilly powder, dry mixed herbs, red chilli flakes, country/palm sugar, Kashmiri chilly powder, salt to taste and cook all the ingredients well.
11. Add in the prawns (cleaned and washed) and cook for 3 mins.
12. Add in the cooked pasta and toss it well along with the tomato sauce that is prepared. Mix it till the pasta is well coated with the sauce.
13. Add in the chopped spring onions (green part) and mix it into the pasta.
14. If needed, add in the pasta cooked water to make it more juicier.
15. Garnish with some chopped spring onions, squeeze in juice of half a lemon and serve it hot.
