Italian pasta with eggplant and tomato. A vegetarian pasta dish with few ingredients and a lot of flavor.
Ingredients:
3 tablespoons olive oil
2 st eggplant
4-5 tomatoes
3 garlic cloves
400 g spaghetti
1 teaspoon chili flakes
1 tablespoon salt
200 g feta cheese
Do this:
Cut eggplant and salt with a tablespoon of salt on a kitchen towel. Let stand 30 minutes.
Cut the tomatoes and place in a bowl. Sprinkle a pinch of salt on the cutting board, peel and chop the garlic.
Brown eggplant in olive oil in a frying pan, stirring occasionally until eggplant is soft. Put eggplant in a bowl.
Fry the garlic in the oil and let it brown just slightly while stirring. Be careful not to burn it, sprinkle with chili flakes.
Turn the tomato over and stir until the tomato begins to soften.
When the sauce has boiled together a little on high heat for about 4 minutes, add the eggplant and crumbled feta cheese, let simmer on low heat.
Cook the pasta according to the instructions on the package.
Mix spaghetti with the sauce.
Top with basil leaves.
