Pomodoro sauce
Olive oil – 5 tbsp
Yellow onion – ½, chopped
Garlic – 5 cloves, minced
Tomatoes – 4, peeled
Salt – 1 tsp
Water – as needed, boiling
Baby spinach – ½ lb
Ricotta cheese – 1 lb, whole milk
Parmesan cheese – ¾ cup, grated
Eggs – 3
Salt – 1 tsp
Black pepper – ½ tsp
All-purpose flour – ¾ cup
Water – as needed, salted
Garnish
Parmesan, freshly grated
PERSONAL NOTE ✒️
Gnudi is a typical first course (primo) in Tuscan cuisine. They are simple to prepare: a mixture of spinach, eggs, ricotta, and Parmesan cheese formed into plump dumplings coated with flour. Think of them as cheesy dumplings. They are simply delicious! And easy to cook – just boil them in salted water until they float to the top. Also, it’s suitable for all my vegetarian friends. I got this recipe from Chef Billy Parisi @chefbillyparisi – check out his YouTube channel; it’s fantastic! This ricotta gnudi recipe is delicious with Pomodoro sauce. Needless to say, my family devoured all of them in no time. I will surely repeat – 😋 Highly recommend!
