Hello everyone! Welcome back to my channel!
In today’s video I show you how to prepare a gourmet quality Italian inspired dish with a few simple ingredients that will sure to please any person who likes Italian food and fish!!

Recipe Ingredients:

1 pound of white fish sliced thin for this recipe, ( I used flounder filets) if using thicker fish you may want to bake it or put it in your air fryer, at 400 for 10-15 minutes based on your oven!

1 1/4 cup fresh chopped tomato, seeds removed and liquid removed as well.
1 cup chopped sweet onion
3 Tbsp. chopped garlic
2 Tbsp white cooking wine
4 fresh basil leaves or more to suit your taste
2 Tbsp. Avocado oil, to cook the tomato mixture with, also 2 more Tbsp. to cook the fish in later
1 Tbsp. capers, I soaked mine in water for a few minutes before because they were dry in sea salt in the fridge.

First, you will want to get the avocado hot in a small frying pan once hot put your onions, let those caramelize for a few minutes, then add in the garlic, add your white wine and let that caramelize for a few minutes, then add the tomatoes, and yes… caramelize that too! let that cook down for a few minutes stirring the mixture at medium heat, cooking it down until the mixture become glossy and caramelized. Set that to the side off the heat and let that rest.

Now for the fish, in another pan preferably a large frying pan place the remainder avocado oil and let get hot, salt and pepper your fish before cooking, when the oil is hot place your fish in the pan till cooked on both sides, probably 7-10 minutes keeping a close watch on this as you don’t want to overcook the fish! The fish is cooked when it turns white. After it is cooked let it rest off the heat for about 3 minutes then, plate the fish add the tomato mixture and top with more fresh basil and serve with lemon and a salad and WALAH!!
