An Italian Tries a NEW Pasta Shape | Testing Cascatelli Pasta | Which Sauce is Best?
I used to believe that, when it came to pasta, shape didn’t matter. It’s all the same, right? My Italian wife, Eva, has definitely changed my mind about this. Just as a cutlet and a 3-inch ribeye serve different purposes, each pasta shape has its own special uses which were discovered through hundreds of years of experimentation.
But what about a pasta that has no traditions? No decades or centuries of experimentation behind it? This is exactly what we found when we opened up a box of CASCATELLI, a brand new pasta shape invented by Dan Pashman of the Sporkful Podcast.
In order to give Cascatelli pasta a head start down the long road of tradition, I decided to introduce Eva to the new shape and see if she can discover the best way to prepare it.
