This week we learn how to make authentic Italian homemade marina sauce from scratch using fresh, home grown ingredients.
Ingredients:
60 oz Tomato – peeled
1/4 Cup – Extra Virgin Olive Oil (I like to use a nicer brand when making marinara)
1/2 White onion – Diced
Lots of Italian Parsley
Lots of basil
4-8 cloves of Garlic
3 dashes of oregano
salt – to taste
pepper – to taste
1 – bay leaf (DON’T FORGET TO TAKE THIS OUT)
Directions:
PREP:
Peel your tomatoes by scoring the bottom with an x, boiling them for 1 minute, then dunking them in an ice water bath.
Remove stems and quarter your tomatoes.
Dice onion and mince garlic to preferred chunkiness for your sauce.
Chop basil and parsley
COOK:
On medium high heat, pour your oil into a large, well-seasoned cast iron pan. Let it warm up before adding in your diced onions.
Let your onions get translucent, about 2-3 minutes, before adding in your minced garlic.
Let your garlic cook for 30 seconds before stirring and then add in your diced tomatoes.
Turn heat down to medium low and let tomatoes simmer for 15 minutes. Mash each quarter with a potato masher so they lose their shape.
After 15 minutes of simmering, add in your fresh herbs, oregano, salt, pepper and bay leaf.
Let sauce simmer for an additional 30 minutes, stirring occasionally as to not burn the bottom.
Once it is done, remove bay leaf and use as you’d like.
