4 large peppers, any color
1 pound lean ground beef
10 ounces frozen cauliflower rice
15 ounces canned diced tomatoes, drained
2 cloves garlic, minced
2 teaspoons Italian seasoning
1 teaspoon salt
1 ½ cups shredded mozzarella, divided
½ cup shredded Parmesan
Basil or parsley, for garnish
Preheat oven to 375 degrees.
Cover with foil and bake for 20 minutes. Remove foil and continue baking for 10 minutes or until peppers are as tender as you’d like
