Italian Sausage Soup – Instant Pot

NOTE: If you DO NOT have an Instant Pot of other programable pressure cooker, you can make this on the stove in a large pot with the same instructions, expect to increase the cooking time to 2.5-3 hour(simmer on LOW) or until beans are tender.
INGREDIENTS
– 4-5 links Italian sausage (can substitute turkey or chicken sausage)
– 1 large onion, medium diced
– 1 shallot, small diced
– 1 green bell pepper, medium diced
– 5-6 cloves of garlic, crushed and minced
– 15-20 mushrooms, halved
– 15-20 small tomatoes
– 1/2 teaspoon Italian seasoning
– 1/2 teaspoon garlic powder
– 1/2 teaspoon garlic powder
– splash of white wine vinegar
– splash of white wine
– Small bunch or parsley, stems removed and minced
– 8 cups chicken stock or broth
– 1 teaspoon chicken bouillon paste or bouillon cube
– 1 lb dried Great Northern beans or other dried white bean
– salt & pepper to taste
– Grated parmesan cheese (optional)
DIRECTIONS
1. Preheat Instant Pot, or other programable pressure cooker to sauté/high
2. Brown sausages on both sides. They do not need to be fully cooked though. After browned, set sausages aside to cool. When cool, slice into 1/2 inch pieces.
3. Add a little olive oil to pot and add chopped onions, shallots and green bell peppers. Sauté 1-2 minutes
4. Add chopped garlic, tomatoes, and mushrooms to pot. Cook 1-2 minutes
5. Add Italian seasoning, garlic powder, and onion powder.
6. Add a splash each of white wine vinegar and white wine. Cook 1-2 minutes.
7. Add 8 cups chicken stock/broth and 1 teaspoon of chicken bouillon paste or bouillon cube.
8. Add 1 lb dried Great Northern beans or other dried white bean.
9. Set Instant pot to cook for 50 minutes on HIGH pressure.
10. Cover and cook for 50 minutes.
11. After pressure release, open pot and mix.
12. Add salt, pepper and half of the chopped parsley
13. Plate in a bowl and garnish with a little more chopped parsley and grated parmesan cheese.
