Vegan Recipes Stuffed Shells Recipe:

INGREDIENTS:

12 oz box jumbo shell noodles
6 oz pasta sauce
1 bunch spinach
1 shallot
3 tbsp basil chopped
3 tbsp parsley chopped
7 oz. medium firm tofu

Cashews cheese ingredients:
1 c cashews
1 lemon juiced
1 tsp garlic powder
1/4 tsp onion powder
1/4 c nutritional yeast
1/3 c water
Salt to taste

DIRECTIONS:
Cashew Cheese:
1.) Soak your cashews in water for 2 hours before making the recipe. This softens the texture.
2.) Just one step, blend all the ingredients until creamy.
Stuffed Shells:
1.) Chop your spinach very small into 1 inch sized pieces. Dice the shallot.
2.) Add the shallot and spinach to a pan on your stove and cook it about 50% of the way. Add water along the way to keep it from sticking.
3.) Now make the stuffing. In a big mixing bowl; add the cooked spinach + shallot, cashew cheese, tofu, parsley and basil. Also add salt to taste. Use a potato masher, or a spoon, to mix and mash all of the ingredients together. Really break up the tofu into little chunks.
4.) Cook the jumbo shell noodles 30% of the way, or about 5 minutes.
5.) With a spoon, gently add a spoonful of the stuffing into each noodle.
6.) Grab your baking dish. This recipe makes enough to cover a large baking dish. About 13″x10″ in size.
7.) Add a thin layer of pasta sauce to the bottom of the dish. Place your stuffed noodles in the dish. Cover the noodles with another layer of sauce.
8.) Bake on 400° F for 20-22 minutes.
