Making pizza at home on the grill, Italian style, starts with fresh ingredients. Fresh dough, fresh sauce, fresh vegetables. You get the picture. It also involves a bit of fast work getting the dough on the pizza peel and then onto the hot stones in the BBQ. It will take a few tries but you can master it.

This video is about how to make pizza at home without an oven. On the grill it is! Below you can find a pizza dough recipe. I’m going to demonstrate what I do for homemade pizza and how to grill it. Its my own little trip to Italy without leaving the house.

A few tips:

1/ Its very important to have dough at room temp. If you made dough or bought it then put it out early, cover in plastic and let it warm up and relax.

2/ Dust the pizza peel with flour and corn meal and put your rolled out pizza dough on it and move fast. As you assemble the pizza, shake the peel a few times to make sure the dough slides around. USE a wooden peel for assembly and putting the pizza onto the stones. It will slide easier than a metal peel. Which is what I use to take the pizza OFF the stone so the wooden one never really heats up.

3/ Be creative – any combinations go. White or red sauce. No sauce. Veg. Meats. Its your dinner. There are no rules.

4/ Take your time. Don’t rush. Have a cocktail. Cook the pizza one at a time. Enjoy a slice or two. Then cook some more. Its about the experience. You are not Dominos.
