Ingredients:
1 large eggplant
1 tomato
100 g mozzarella
1 egg + 1 tbsp water
3/4 cup plain bread crumbs
1 tsp salt
1 tsp dry parsley
1/2 tsp crushed red pepper
1 tsp dry basil
3/4 cup all purpose flour
tomato sauce
fresh parsley
oregano
Bake 25 min | 390F
Bake 10 min | 390F
