Recipe and Ingredients:
2 Eggplants – diced
1 Red Bell Pepper – diced
1 Yellow Bell Pepper – diced
1 Onion – diced
Minced Garlic – 1 tbsp
1 Red Chilli Pepper – diced
Sliced Olives – 150g
Black Raisin – 150g
Yellow Raisin – 150g
Almonds – 100g chopped
Olive Oil – 300ml
Fresh parsley – to taste
Fresh chive – to taste
In a pan add 100ml of olive oil and the onions
Cook the onions until translucent, and add the minced garlic
Add the bell peppers, red chilli pepper and 100ml of olive oil cook until tender
Add 100ml of olive oil and the eggplants, low the heat and cook until tender
Turn off the heat, and add the olives, raisins, almonds, fresh parsley and fresh chive.
Mix all the ingredients and transfer the Caponata to a bowl and let it cool before eat.
