It may sound fancy, but meatballs with creamy polenta is an easy and delicious meal we know you’ll love.
Here is our favourite recipe (and step-by-step guide) that is perfect for any night of the week. Like we said, this polenta and meatball recipe is easy, but better yet, absolutely delicious.
Step 1: First, start by chopping up some red onion (or white) and heat your pan over medium heat with a splash of olive oil. Once it’s heated up, start sauteeing the onions.
Step 2: Add in one jar of strained tomatoes (or substitute a jar of marinara). Add one cup of water and stir. Next comes the seasoning. We like to use salt and oregano, but add in any spices you’d like. Basil, red pepper flakes, and garlic salt also make for great additions.
Step 3: Let it simmer for 30 minutes.
Step 4: Time for the easy meatball recipe! We used 1lb. ground beef for this meatball recipe, but ground pork or ground turkey work just as deliciously. Chop garlic and parsley into the beef, season with salt and pepper, and add bread crumbs, one large egg, and parmesan cheese (shredded or grated both work fine).
Step 5: Mix thoroughly and form the meatballs into golf ball-sized meatballs. With 1 lb. of beef, you should be able to roll 6-8 meatballs.
Step 6: Shallow pan fry the meatballs in a generous amount of olive oil over medium heat. Cook them until they begin browning on each side, then add to the sauce and cook for another 10 minutes.
Step 7: Time for the easy creamy polenta recipe! Add salt and olive oil to a pot of simmering water and slowly stir in the cornflour. Keep stirring and cooking until desired consistency.
Step 8: Place your creamy polenta on a plate with your meatballs, sauce, and more parmesan cheese sprinkled on top. You can also top your meal off with fresh basil or parsley and freshly cracked pepper.
And the final step? Enjoy every mouthful of your quick, easy, creamy polenta and meatball meal.
