Octopus Spaghetti is a fragrant seafood recipe from the Amalfi coast of Italy using iconic Southern Italian products like Spaghetti and Amalfi Lemons. Amalfi Lemons have a unique and intense flavor that adds a wonderful sweet-sour twang to sea food recipes.
Cooking octopus is not as daunting as it seems and the secret is not to overcook it. The simmering time in boiling water depends entirely on the size of the octopus, it should be just tender enough for the edge of a sharp knife to pierce easily. Overcooking will lead to the flesh becoming dry and will toughen up again.
