PENNETTE AMATRICIANA

Serves 4
Ingredients:
400g of penne
200g of Sardinian smoked pancetta
500g of cherry plum tomato sauce
Fresh basil (to taste)
Fruity extra virgin olive oil (to taste)
Semi – matured pecorino cheese (to taste)
Sea salt (to taste)
Black pepper (to taste)
Method:
Bring 4 litres of salted water to the boil
Cut the pancetta into smaller squares
Saute’ in a non-stick pan
Add the cherry plum tomato sauce
Mix well and let it cook for 10 min
Add fresh basil to the sauce
Cook the penne for 10 minutes
Grate the pecorino cheese
Drain the pasta and add it to the sauce
Stir for 3 minutes
Add the pecorino cheese
Plate up
Add the extra virgin olive oil
Sprinkle with the pecorino cheese
Finish with black pepper
