Gauri & Nitin Dhamale
Ingredients –
Sliced Bread – 8 slices Multi grain bread / Ciabatta bread
Chicken – 250gm (Breast Boneless sliced thinly )
black pepper corn – 8 to 10 no
fresh basil leaves – 1 handful
Garlic – 10 to 12 cloves
cashew nuts – 15no
Olive oil – 30ml
Green Olives – sliced
Onion – petals of small half onion
Red, Yellow, Green Capsicum – large dices of ¼ capsicums Approx. 100gm
Fresh Mozzarella Cheese – 100gm
Apple cyder vinegar – 1 teaspoon
Butter – to spread on Bread slices and some for grilling
Salt to taste

Method

• Make Pesto sauce by blending Basil leaves, Garlic, cashew nuts salt and olive oil
• Marinate chicken slices with Apple cider vinegar
• Add Pesto sauce, and Peppers and Onion petals mix well and marinate for 20 to 30 min
• Heat pan add little oil and cook marinated chicken on high heat for 5 min and mid. heat to 3 to 4 min till chicken cooks. Let it cool
• Butter all bread slices add layer of cooked pesto chicken and veg spread evenly
• Add sliced fresh mozzarella cheese, sprinkle black pepper powder
• Cover with other slice and grill in pan till crispy with butter
• Serve hot
