There are several shapes that come under the umbrella name of ‘Cappellaccio’ in Italy, which literally means ‘big hat’ which could either be dirty or floppy!

In this short video, I show you how to make the Cappellaccio known as a Nun’s hat /wimple or ‘Cappello di Suora’.
All you need is a pasta square with a filling. That’s it!
I make my pasta using a classic flour and egg dough and roll out by hand using a rolling pin.

I use a classic egg dough and roll out by hand with a rolling pin. The dough ratios are 100g 00 soft wheat flour for every 1 egg (weighing 62-65g). If your eggs are smaller, you may want to reduce the amount of flour slightly.
