Risotto is a typical Lombard first course: toasted rice cooked with vegetable or meat stock together with potentially infinite different ingredients.
In this case I prepared the typical Milanese saffron risotto with a red wine reduction to counterbalance the fatty flavor of the rice.

I followed the Lombard tradition to prepare risotto with butter, but if you want a lighter version just choose a good quality margarine or simply some evo oil and go with it.
