This recipe came together super quick I actually cooked the meat from Frozen but you can use thawed just the same the website I referred to in the video where you can buy lots of products that are sometimes hard to find is netrition.com this recipe not only is weight watcher friendly it is also family friendly and meal prep friendly as well this recipe can be cooked in an instant pot or a slow cooker whatever you have and is convenient for you
Mississippi Italian Chicken Sandwiches
Serves 8-10 Approximately
2 of the 16 oz jars mild banana peppers with juice (you will want 1 jar with juice for meat mixture and the extra for topping sandwiches)
2 envelopes 1oz each ranch seasoning
3lbs chicken breast Frozen or raw
Bacon Bits
Dried Chives
Fat Free Mayo
Fat Free Cheese ( Cheddar or Mozzarella)
Sandwich Buns of your Choice (I used Aunt Millie’s live carb smart buns 1 pt each)
in your instant pot you’re going to add one 16 oz jar of banana peppers along with the juice 3 lb of chicken breast and two full envelopes of ranch seasoning mix cook it on high pressure for approximately 25 minutes if frozen about 15 to 20 if thawed in the sealed position you may quick release pressure at the end once chicken is cooked take a hand mixer blender to easily and quickly shred the chicken breast mixture it is as simple and easy as that I used this mixture on sandwich buns I topped my sandwich with fat free Mayo dried chives a small amount of bacon bits banana peppers and fat-free mozzarella and cheddar cheese if you spray the fat free cheese just a tiny bit with cooking spray it makes the cheese melt ooey gooey and deliciousness if using everything I used in the recipe you can have 1 Sandwhich for 2 points in total thanks for watching everyone I hope you enjoy don’t forget to subscribe to my channel for more
