INGREDIENTS (serves 4/6):
For the GNOCCHI:
-1kg red potatoes
-300gr flour
-1 medium egg
-a pinch of salt
-olive oil
For the SAUCE:
-600gr tomato purée
-5 basil leaves
-1 garlic clove
-a pinch of salt
-a pinch of pepper
-300gr mozzarella
-80gr Parmesan cheese (grated)
Boil your potatoes in salted water for about 20-25 mins or until tender. Let them cool a bit so you can handle them and remove the skin.
Use a fork or a potato ricer to mash your potatoes, then mix them with flour, egg and a pinch of salt.
Knead your dough until smooth, then cut a piece and roll it into a thumb-nail thick cylinder (approx 2cm thick).
Slice the dough into smaller pieces, of 3 cm each, and use the back of a fork to give your gnocchi the typical shape.
In the meanwhile, sauté garlic and freshly chopped basil with olive oil, add your tomato purée, season with salt and pepper and cook over low heat for about 30 mins.
Boil your gnocchi in salted water until they surface to the top. Then mix them with your tomato sauce.
Pour your tomato gnocchi in a ovenproof dish, add some shredded mozzarella and grated Parmesan cheese. Repeat.
Bake for about 5 mins or until the mozzarella will look nice and crispy on top! Enjoy!
