Vegetarian Lasagna is one of my hearty meals!! It is generally served in Italian cuisine and a famous dish loved by all.
It is generally served with garlic bread but can be completely enjoyed even without it.
The recipe is simple….3 different layers, red sauce, white sauce and fried vegetables.
So this Vegetable Lasagna is full of fresh broccoli, bell peppers, sweet corn and mushrooms…. layered with creamy white sauce and tangy red sauce ….topped with cheese… trust me, this is an amazing super easy recipe which you all will relish.
The recipe can be easily altered by using vegetables of your choice or available to you.

❤️ RED SAUCE ❤️
👉 INGREDIENTS:
1- Oil – 2 TBSP
2- Garlic- 5/6 crushed
3- Tomato puree – 2 CUPS
4- Red chilli flakes- 1 Tbsp
5- Onion – 1 ( medium size chopped)
6- Oregano- 1 TSP
7- Pinch of black pepper
8- Salt to taste and sugar- 1 TSP
9- Tomato ketchup- 1 Tbsp

👉 PROCEDURE:
1- Heat oil in pan on medium flame, add
garlic and onion…let it be translucent.
2- Add red chilli flakes, oregano, black pepper
salt, sugar, tomato ketchup and tomato
puree….simmer for 5-8 min.
3- Now cover the pan and cook for 10 min.
4- Homemade Red Sauce is ready.

❤️ WHITE SAUCE ❤️
👉 INGREDIENTS:
1- Soft butter – 30 gms
2- Maida – 30 gms
3- Milk – 400 ml
4- Pinch of nutmeg powder
5- Black pepper- pinch
6- Oregano- 0.5 TSP
7- Processed cheese- 50 gms
8- Salt to taste

👉 PROCEDURE:
1- Set pan on medium flame, add butter.
2- Let it melt, add all purpose flour and cook
for 2-3 minutes… colour will change to light
brown colour.
3- Add milk gradually… keep stirring to get
lump free sauce.
4- Add salt, pinch of black pepper, oregano
and nutmeg powder…stir well.
5- Now add processed cheese…mix mix
6- Cook for 7-8 minutes.
7- White sauce is ready.

❤️STIR FRIED VEGETABLES ❤️

👉 INGREDIENTS:
1- Olive oil- 1 tbsp
2- Crushed garlic- 2 tbsp
3- Ginger paste- 1 tbsp
4- Mushrooms sliced- 1/3 cup
5- Broccoli- 1/3 cup
6- Yellow bell pepper- 1/3 cup
7- Red bell pepper- 1/3 cup
8- Green bell pepper- 1/3 cup
9- Sweet corn- 1/3 cup
10- Sugar- 1 TSP
11- Black pepper- pinch
12- Oregano- 1 TSP
13- Red chilli flakes- 1 TSP
14- Salt to taste

👉 PROCEDURE:
1- Set pan on medium flame, add olive oil.
2- Toss garlic and ginger paste, cook for 2
minutes.
3- Add mushrooms and cook for 1-2 min on
high flame.
4- Add broccoli following with sweet corn
and 3 types of bell peppers.
5- Add salt, black pepper, oregano, chilli
flakes and sugar.
6- Cook for 5-6 minutes.
7- Ready to be used.

❤️ LASAGNA SHEETS❤️
👉Boil 4 sheets in hot boiling water for 7-8
minutes and let it cool down to room
temperature.

❤️FOR ASSEMBLY ❤️

1- Take 7*7″ serving dish, microwave safe
2- Spread red sauce covering it with 2
lasagna sheets and again spread red
sauce over it.
3-Now generously spread stir fried
vegetables and over it spread white sauce
4-Again put a larger of lasagna sheets
5- Repeat the process , until you almost
reach the top of dish.
6- Do final layering, by adding generous
amount of mozzarella and processed
cheese.

❤️ FOR BAKING ❤️

1- Preheat oven for 15 minutes at 220
2- Bake in convection+grill mode of
microwave at 200 for 20 minutes or
cheese gets nice golden texture.
3- Lasagna is ready to be served with garlic
bread.
