When you are a vegetarian living abroad, italian pasta and pizza are what you get easily. So we have been trying to make the perfect italian tomato pasta sauce recipe, and the recipe is finally yours now! Please try it and tell us if you did π
Ingredients (serves 2 people)
For the tomato sauce:
– 3 tbsp extra virgin olive oil (you can use groundnut/ regular oil that you use for cooking but olive oil is the best for pasta sauce. You can reduce the quantity of the oil if you want. But this is how we like it)
-1 medium finely chopped onion
– 1 tbsp (~4 cloves) of garlic
– 400gms cherry tomatoes (we recommend using cherry tomatoes as they are a game changer for a red sauce pasta. You can use 300gms cherry tomatoes along with 1 medium tomato if you like)
1tsp dried rosemary
1/2 tsp dried basil
1/2 tsp dried oregano
Freshly cracked black pepper (or black pepper powder)
Salt, as per your taste
For boiling the pasta:
120 gms spaghetti pasta (you can use any other pasta shape)
Do not forget adding a big heaped spoon of salt to the boiling water and cook the pasta for 12 mins
Do not add oil while boiling the pasta
Add 3 tbsp olive oil to a heated pan. Keep the flame on low heat.
Add the chopped onion and garlic and cook for 10 mins on low flame. We need the onions to become soft. Now add the chopped tomatoes and all the herbs and cover & cook for 5 mins on medium flame. Once the tomatoes are soft, mash them really well to get a sauce like consistency. Once that is done, cover and cook for 15 mins on low flame. Keep checking every 5 mins so that you don’t burn the sauce. If you feel it has dried up, you can add a little water. Cook the pasta while your sauce’s last 10 mins are left. Immediately add the pasta to the sauce and mix well. Cook for just 1 minute after adding the pasta. Garnish it with fresh basil leaves and a generous amount of grated parmesan cheese.
