Unbelievable Italian Caprese Salmon Recipe:

Ingredients
4 servings (16 ounces) Trifecta Salmon
1-2 cups spinach
1 cup cherry tomatoes, quartered
¼ cup parmesan cheese, shredded or dairy-free alternative
2-3 tablespoons shredded mozzarella cheese
2 tablespoons lemon juice
¼ cup bread crumbs or panko
1 teaspoon garlic powder
1 teaspoon mustard powder
¼ cup balsamic vinegar
½ cup fresh basil, minced
Instructions
1. Preheat the oven to 350 degrees Fahrenheit.
2. Place salmon filets on a baking sheet lined with foil and set aside.
3. Heat a saute pan over medium-high heat, add 1 teaspoon oil and warm for 30-45 seconds.
4. Saute the grape tomatoes in the pan with the oil for 1-2 minutes until blistered, add the spinach and ½ of the balsamic vinegar to steam the spinach until slightly wilted, about 1 minute. Remove from heat.
5. Top each piece of salmon with the tomato and spinach mixture, followed by a squeeze of lemon juice.
6. In a separate bowl, combine the bread crumbs, parmesan, garlic powder, mustard powder, and minced basil. Sprinkle this over the spinach and tomatoes, then top with mozzarella.
7. Place into the warmed oven and change settings to broil. Broil on high for 3-4 minutes until the cheese has melted and the salmon is heated through.
8. Remove from the oven, drizzle with fancy traditional balsamic vinegar if desired, and serve with a side of roasted vegetables and grains (rice or quinoa).
