Today I want to show you how to make my absolutely delicious GNOCCHI CARBONARA! #shorts

Ingredients (serves 4):
-400gr gnocchi
-150gr guanciale (you can use pancetta cubes or bacon lardons as well)
-4 egg yolks
-50gr Pecorino cheese (grated)
-a pinch of black pepper

First of all, let’s make your beautiful CARBOCREAM!
In a bowl, mix egg yolks with grated Pecorino cheese until beautiful. If you can’t find Pecorino, you can absolutely replace it with grated Parmigiano!

In a pan over medium heat, sizzle your guanciale lardons until nice and crispy. Then remove your guanciale from the pan and set aside.

Boil your gnocchi for the time indicated in the package, drain and add them to your greasy pan.

Toss well over the heat so your gnocchi absorb all the sexy guanciale juices then turn the heat off.

Add your Carbocream along with some gnocchi water if necessary and mix until nice and creamy!

Season with some ground pepper for some extra spiciness!

Serve with your crispy guanciale/bacon lardons on top.
