It is fragrant and full of flavor. To begin this recipe I marinaded the chicken thighs in tomato paste mixed with paprika and Italian seasoning. I set the chicken aside for about 30 to 45 minutes. Then I sautéed the chicken thighs in a pan with oil for 3 minutes on each side. To make this sauce I sautéed the onion, garlic and allowed allowed them to slightly cook and release the flavor and aroma. I added the tomato paste and allowed it to sauté. At this point I added salt and pepper and my mushrooms and celery. I sautéed these vegetables for two minutes and receive a slight cook. Then, I added the semi cooked chicken thighs. To bring out the aroma I added two sprigs of basil and sweet peppers. I added ¼ cup water and allowed the mixture to simmer for 5 minutes. This caused the chicken to become tender and absorb all the flavor of the vegetables and spices. This recipe is flavorful, fragrant, and full of different textures. I hope you give this recipe a try. Italian Chicken Stew-
4 chicken thighs
Marinade:
2 tbsp tomato paste,
1 tbsp paprika, and
1 tbsp Italian seasoning. Sear the chicken in 5 tbsp of oil for three minutes on each side.
Sauce:
½ onion
6 garlic cloves,
1 tbsp tomato paste,
1 tomato,
1 tsp pepper,
2 tsp salt,
6 mushrooms,
1 stick of celery. Cook the sauce for about 2 minutes and add the chicken. Combine the tomato paste and ¼ cup water. Add this to the mixture and allow it to simmer on low heat for 15 minutes.
