Also defined as ‘rustici’ in Italian, these pizza bites are easy and fast to make and are perfect for party or aperitivo or appetizer.

In the video, I am cooking 4 kind of rustici: 1. Panini Napoletani, 2. Girelle di pizza, 3. Involtini wurstel and 4. Bastoncini di pizza.
INGREDIENTS FOR 2 PEOPLE:
– 1/4 cup all-purpose flour
– 3 pizza dough balls ( about 7oz or 200gr each)
– 1 pepper already cooked
– 1 sausage already cooked
– about 4oz cheese or more (mozzarella, provolone, caciocavallo, parmesan)
– about 3oz charcuterie (ham, salami, prosciutto)
– 1 big hot dog (in Italian we call it wurstel)
– tomato sauce already cooked
– oregano

1. PANINI NAPOLETANI
Origins ⇢ Born as a humble rustico, known also as pagnottielli or pagnuttielli, they are traditional Neapolitan street food that still today you can find in any bakery in Naples for less than a dollar. Its origin is from ancient Neapolitan housewives, who tried to stuff bread using leftovers from dinner or anything they had at home. Panini Napoletani were hailed as a Neapolitan novelty and still today this dish represents us all over the world.
How to make them ⇢ roll out 1 pizza ball of about 7oz, add parmesan half of the cheese and all the charcuterie (add more if you prefer but don’t exaggerate because the roll can brake then), roll it and seal it, cut into thick and wide slices.
2. GIRELLE DI PIZZA
How to make them ⇢ roll out 1 pizza ball of about 7oz, add half of the cheese, peppers and sausage (cook peppers and sausage before, drain the peppers and let it cool completely before adding them to the roll), roll it and seal it, cut into thick and wide slices.
3. INVOLTINI wurstel and 4. BASTONCINI DI PIZZA
How to make them ⇢ roll out 1 pizza ball of about 7oz and cut into strips. Slice the hot dog with half strips, place a piece of hot dog on each strips and roll the dough. Use the other half of dough to make bastoncini, pour some tomato sauce (cook it before with a little bit of oil) on the strips and add oregano and salt.
Arrange the rustici obtained on a baking sheet, brush them with oil and bake at 400 ºF (about 200 ºC) for about 15-20 minutes.
