What’s on the menu ? Ricotta Gnudi (gnocchi) with mushrooms and spinach
Ingredients needed :
Gnudi (gnocchi)
– 225g fresh ricotta cheese
– 20 g freshly grated Parmigiano-Reggiano
– 1 extra-large egg, lightly beaten
– 5g unsalted butter, melted and cooled slightly
– ¼ teaspoon freshly ground nutmeg
– 68g all-purpose flour, plus more for dusting
– 40g Semolina flour
Sauce / Garnish
– Kosher salt
– 32g extra-virgin olive oil
– 225g mushrooms cleaned and cut into rough 2-inch segments
– 4 large garlic cloves, thinly sliced lengthwise
– 1 tsp fresh thyme leaves
– 113g unsalted butter, cut into pieces
– 200g baby spinach (washed)
– 18g finishing-quality extra-virgin olive oil
– Wedge of Parmigiano-Reggiano, for grating
– 1 lemon, for zesting

– Spider / Skimmer
