Chicken Marsala

Ingredients
1 1/2 lbs chicken breast
1/2 cup flour
2 tablespoons butter
4 garlic cloves, minced
8 oz mushrooms, sliced
3/4 cup Marsala wine (see note)
1 cup chicken broth
1/2 cup heavy cream or half and half

Directions
Slice each chicken breast in half (so the knife is parallel to cutting board). Pound evenly to form cutlets. Season well with salt and pepper and dredge each piece into the flour.
Heat oil in a pan over medium high heat and cook chicken until cooked through. About three minutes per side depending on the thickness. Remove, set aside and wipe pan clean.
Add butter. Once butter has melted sauté mushrooms and garlic over medium heat. Cook for 4 minutes.
Stir in marsala wine and bring to a boil. Let simmer over medium high heat for 2 minutes.
Add chicken broth and heavy cream or half-and-half. Season with salt and pepper and let simmer until slightly thickened, about 3 minutes. Return the chicken back to the pan and remove from heat.

Note
Find Marsala cooking wine in the oil and vinegar section of your grocery store. Don’t substitute this ingredient as it will affect the taste of the dish. The cooking process will burn the alcohol.
