Pancetta
• 2,2 Kg Pork belly ( deboned and skin removed)
• Sea salt 3% of pork belly weight ( 66 grams )
• Treacle sugar 2% of pork belly weight ( 44 grams )
• Black pepper 1,5% of pork belly weight ( 33 grams )
• ½ tablespoon Garlic flakes
• ½ tablespoon Fennel seeds
• ½ tablespoon Chilli flakes

• 500 grams Spaghetti
• Few tablespoons of olive oil
• 300 grams of Pancetta
• 4 large eggs
• 200 grams grated Pecorino cheese
• Black pepper
