How to Make Mussels Steamed in a Fennel, Garlic & Wine Broth.

Ingredients
1-2 pound package Mussels, rinsed under cold water prior to cooking KEEP Mussels Refrigerated until use.

2 Tbsp Extra virgin olive oil
2 garlic cloves finely minced+ 3 whole cloves garlic
1 small yellow onion, roughly chopped
1/2 fennel bulb, roughly chopped including the green stalks
1 tsp.red pepper flakes
1 tsp. French Thyme
2 bay leaves
1 Tbsp butter (in the video I said 1 tsp that is not correct One Tablespoon)

In a large skillet with a cover. Over medium heat, add olive oil, minced & whole garlic. onion, fennel, red pepper flakes, French thyme, bay leaves and butter, cook just until onion becomes translucent.

Then next you will add the following ingredients

1 1/4 cup red table wine you will hear that sizzle. Stir and add in your 16 ounce can of UNSALTED tomatoes.

Bring mixture to a boil allow to boil for 5 minutes or so. Reduce to a low simmer and cover. Simmer 1 hour unpo two is preferred. Checking in on the sauce every now and again and give a stir.

Start to boil water for your plant based or regular pasta. Be certain to salt the water. When you are ready set go with your plant based pasta almost ready to drain away its water. Now is the TIME to rinse under cold water in a colander the mussels. Once you have rinsed the mussels you are ready to go.

Final Step in the process of How to Cook Mussels. How to cook Zuppa De Cozze. A Neapolitan Classic Recipe & Meal.

Under cold water in a colander rinse your mussels. Add mussels to the sauce. Cover skillet and check back in 4-6 minutes. Turn off the heat.
Now drain plant based pasta. Next portion out the plant based pasta onto your serving plates. Next dollop mussels over the pasta and ladle some wine based marinara broth, over both the plant based pasta as well the ladle some sauce over the mussels.

Serve with fresh Italian Bread, Crostini crackers and a healthy glass of Wine. ENJOY
