Mushroom Bruschetta

Ingredients:
1 bread loaf, sliced
2 tbsp garlic and herb butter
1 tbsp garlic mayonnaise
2 tsp cooking oil
1tbsp garlic, chopped
400 gm button mushroom, chopped
1/2 tsp thyme
2 tbsp fresh parsley
salt and pepper to taste
Red capsicum slices to garnish.

Preparation:
1. Cut your bread loaf into diagonal slices, apply garlic and herb butter on one side and toast your bread in a pan.
2. In a pan heat 2 tablespoons of oil. Once hot, add the garlic and saute until fragrant. Add the mushrooms, salt and pepper, reduce the heat to medium and cook for about 10 to 12 minutes, stirring often. Add the parsley and thyme, cook for another 5 minutes.
3. Apply garlic mayo on one side of the bread slice, add the prepared mushroom on top and garnish with red capsicum slices and fresh parsley. Enjoy!
