In this video I’m going to show you how to make fresh homemade ravioli from the egg pasta dough.

Instruction for the Dough:
1- In a Large bowl whisk the Flour 00 and the Semolina
2- Make a well in the centre of the flour and add in the eggs all at once. Mix them together well using your hands, knead the dough for 5 mins. Form into a ball, cover with cling film and rest for 30 minutes.
3- Take a small piece of the dough and either run it through a pasta machine a few times or use a rolling pin.
4- Place 1/2 tablespoon of filling on the dough, leavening space between them. Cover the filling with the other part of the pasta.
5- Use a smaller cutter to seal the dough around the filling, then a bigger cutter to cut the raviolis out.
6- Continue with remaining pasta dough until all the dough or filling has been used.
