Lasagna
-1 tablespoon olive oil
-1 onion diced
-salt and pepper to taste
-1 pound ground beef
-1 pound hot Italian Sausage
-4 cloves garlic minced
-1 tablespoon dried Italian seasoning
–1 quart tomato sauce
-12 ounce tomato paste
-1 cup water
In large frying pan, heat oil and add onion; cook 15-20 minutes until onion is soft and cooked down. Add ground beef and sausage; cook until brown. Add garlic, Italian seasoning, tomato sauce, tomato paste, and water. Bring to simmer for 30 minutes.
Meanwhile cook 12 lasagna noodle in large pot of salted water. cook until al dente.
Filling;
-24 ounce of cottage cheese
-1/2 cup parmesan cheese
-2 eggs
Assemble; in 13 x 9 inch pan.
Sauce, noodles, cottage cheese mixture, cheese, and sauce; repeat. Place in pre heated 350 degree oven and cook until bubbly and warmed through. Let rest 10 minutes before serving.

Garlic Butter
-1 pound soft butter
– 8 garlic cloves minced
– 1/4 teaspoon dried Italian seasoning
-2 teaspoon kosher salt
-2 tablespoon minced fresh parsley
-2 teaspoons minced fresh chives chives
-1 lemon zested
Mix together. Freezes well.

Italian green salad;
5 oz Spring mix
handful sliced pepperoncini rings
4 oz diced pimentos drained
jar quartered and marinated artichoke hearts
pint cherry tomatoes
shaved parmesan cheese
Toss all ingredients and serve with Italian dressing.
