Amazing Cioppino Recipe
Ingredients:
3 tbsp olive oil
1 leek – thinly sliced & rinsed
1 onion – chopped
3 cloves of garlic – finely chopped
2 bay leaves
1.5 tbsp tomato paste
1 can tomatoes – 16 oz.
1 can tomato sauce – 8 0z.
1 bottle clam juice – 8 oz. (optional)
32 oz. seafood stock (you can use veg. stock instead)
2 lbs bag of mussels – refrigerated before use then rinsed thoroughly
20 medium shrimp – peeled and deveined (you can buy ready to cook)
2 catfish fillets – cut into chunks. ( you can use Halibut or any other firm fish)
Salt, black pepper and red pepper flakes to taste
Garnish with chopped Italian/flat leaf (optional)
Method:
Heat a dutch oven or large nonstick pan
Next add oil, once hot add tomato paste and saute for 1 minute
Then add leek, saute for 2 minutes
Then add onion, garlic & bay leaves
Stir fry mixture for 2 minutes until onion become soft
Now add tomatoes & tomato sauce.
Mix well then add seafood stock & clam juice
Add salt, crushed black pepper and red pepper flakes
Mix well, cover with lid and let simmer for 30 minutes
Open lid then add mussels, shrimp and catfish
Stir well, cover with lid again and simmer for 5 more minutes
Finally, open lid, adjust seasoning and transfer to serving bowl
Garnish with roughly chopped flat leaf parsley (optional)
