In this video I’ll show you a really quick & tasty Italian Vegetarian sauce. It’s super easy. So here we go, an easy vegetarian pasta recipe for you! Italian style.

RIGATONI all’ORTOLANA
INGREDIENTS:
1 pack of Rigatoni
1 onion (chopped finely)
1 clove of garlic, I put it in whole or you can finely chop it
1 aubergine (chopped into cubes)
2 medium size courgettes (zucchine) (chopped into cubes)
1 Red Pepper
1 Yellow Pepper
1 carrot finely chopped
1 celery stick finely chopped
Fresh Basil
Extra virgin olive oil
4 finely chopped vine tomatoes OR tinned chopped tomatoes/ tomato sauce
rock salt
1/2 stock cube for extra flavour
UTENSILS:
1 x large saucepan
1 x 5L deep pot
METHOD
1. Add extra virgin olive oil into a large saucepan and then cook the onion, garlic, celery and carrot together for about 5 minutes on a medium heat, until they start to brown & soften
2. When the onion and garlic begin to brown add the peppers and courgettes
3. Cover the saucepan with a lid and cook for about 5 minutes
Add the courgettes
4. Add half glass of water into the saucepan and a pinch of sea salt & stock if you are using it
5. Place the saucepan with the vegetables on the stove at a medium-high heat for another 5-7 minutes
6. When the vegetables became soft, add the finely chopped tomatoes, basil and an extra pinch of sea salt.
7. Now cook the sauce on medium heat
8. Get a large pot and fill it with water. Put this on the stove at a high temperature until it boils in preparation for the pasta.
9. Once the water starts boiling. Add a palm full of sea salt to the water and stir. Then check the cooking time on your packet of pasta, pour the pasta in, and set your timer. I always go for 9 minutes and then keep checking the pasta. If you feel more comfortable, make sure you follow the time on the packet. Always taste the pasta before draining!
10. Put the sauce to low heat.
11. Once the pasta is cooked, drain it and add it to the pan with the sauce.
12. Mix it and then transfer it into the large pot where you boiled the pasta.
13. Don’t forget the Parmesan cheese! Add this to each dish before serving. You can also add some fresh basil leaves to decorate the plates.
