Ingredients:
* Lasagna 9
* Salt
* Black Pepper
* Water
* 1/2 onion chopped
* 1 minced garlic
* About 1 cup mushrooms cut into slices
* About 2 cups green and red bell peppers cut into slices
* Half a zucchini thinly sliced
* About 2 cups spinach chopped
* 1 egg
* 1 26 ounce jar of pasta sauce
* Some oil
* About 2 cups ricotta cheese
* 1 cup Parmesan cheese
* 1 cup mozzarella cheese
Steps:
1. Cook the lasagna noodles in a large pot of boiling water for 10 minutes, or until al dente. Rinse with cold water, and drain.
2. In a large saucepan add oil and garlic cook for 30 seconds
3. Stir in mushrooms, bell peppers, onion, zucchini.
* Add salt and pepper and cook on medium-high heat for a free minutes
4. Stir in pasta sauce; bring to a boil. Reduce heat, and simmer 15 minutes.
5. In a bowl mix together ricotta, some mozzarella cheese, some Parmesan cheese, and egg.
6. Preheat oven to 350 degrees F (175 degrees C). Spread 1/2 cup pasta sauce into the bottom of a greased 9×13 inch baking dish.
7. Layer each lasagna noodles with ricotta mix, and sauce mixture. Repeat layering.
* On top add remaining mozzarella and Parmesan cheese.
8. Bake, uncovered, for 40 minutes. Let stand 15 minutes before serving.
