How to cook octopus, more specifically, how to cook tender octopus – here is my octopus recipe. Octopus has a delicate flavour and if cooked right a delicious texture that can be served in a simple marinade or chargrilled, or even dusted and fried to make extra crispy octopus.

Ultimately the key (or the way I do it anyway!) is to gently braise the octopus first to get it tender and then let it cool before doing anything else with it.

This is my octopus recipe for braised octopus that you can eat as is, grill or even BBQ octopus.

The secret is to freeze your octopus first – this helps tenderise the meat before cooking. Although most octopus you find will be frozen unless you a lucky enough to find a fisherman with some!
