Search for:

400 grams lamb shoulder or leg of lamb (fat untrimmed)
2 tbs olive oil
2 cloves garlic
2 small onions
2 tomatoes
Salt and pepper to taste

Make sure not to discard the trimmed fat and to melt it in the pan and then cook the meat in it for extra flavor. You can discard any pieces of fat that have not fully melted.

If you don’t have a Roccbox oven, you can easily do this dish on a regular oven top with the heat turned to maximum. Sear the meat first and then set aside (discard any liquid that comes out of the meat), next cook onions and tomatoes in the skillet. Finally add the meat back to the mixture and cook until meat is cooked.
