Pistachio cookies are a simple and tasty kind of cookies, traditional of south Italy. The recipe is very fast and easy to make but the outcome is great, give it a try!!

INGREDIENTS FOR ABOUT 20 COOKIES

150 gr ( 5.29 ounce ) pistachio or pistachio flour
100 gr ( 3.53 ounce ) sugar
1 egg
40 gr ( 1.41 ounce ) melted butter
80 gr ( 2.82 ounce ) all-purpose flour
30 gr ( 1.06 ounce ) potato starch
15 gr ( 0.53 ounce ) instant yeast
powdered sugar

INSTRUCTION

take 150 gr pistachio flour or take 150 gr unsalted pistachio and chop them finely with a food processor being careful not to allow the nuts to turn to butter.

in a mixing bowl put 100 gr sugar and 1 egg work them with an electric whisk. When it change color add 40 gr melted butter and work the mixture until it becomes creamy and smooth

in an other mixing bowl put the pistachio flour, 15 gr instant yeast, 80 gr all-purpose flour, 30 gr potato starch and mix well

Add this dried ingredients in the “cream” a little at the time mixing well

Put the dough in a plastic wrap and put in fridge for 1 hour to rest

now take a bit of dough, roll into a ball ( about the dimension of a walnut )and roll them in powdered sugar so that they are completely covered.

put the balls on an oven tray cover with baking paper

Cook for 15 minutes at 180 C°
