Italian style lamb stew from Gennaro Contaldo recipe. Very easy simple and delicious dish. Gennaro is one of my favorite chefs. I cooking from his books quite often and this is another example of a perfect dish.
cook 30 minutes on stew/meat then natural release.
ingredients (for 2 people and 3.5 l pressure cooker. Just double the size for bigger cooker):
400 g lamb shoulder
2 tbsp olive oil
2 small potatoes
8 baby tomatoes
few sprigs of fresh thyme
100 ml of white wine
150 ml chicken stock
1 anchovy filet
1 carrot
10 cm celery stick
1 medium onion
1 garlic clove
2 – 3 tbsp green peas
