Preparation:
mix season ingredients from the video list (02:12) in a bowl set aside or save for later to use in other Italian cuisines.
Remove casing from sausage and cut into 1-inch size “balls”
Dice tomatoes
slice the mushrooms
mince the garlic
Directions:
place cask iron skillet on a medium-high heated stove or fire. Clean your area from the previous preparation. This will allow time for the skillet to heat before adding the sausage.
Once the sausage is added, throw in a tablespoon of that seasoning mix and cook for about 5-8 minutes until the sausage is a golden brown and the pink is barely visible. (don’t worry the sausage will have time to cook further in the process) Remove from skillet and set aside for later.
Add in the olive oil then the mushrooms, tomatoes, and garlic. The oil brings out their flavor while cooking. Saute the vegetables until tender. 2 minutes.
***Don’t forget a little seasoning.***
Add in the tomato sauce and stir along with the remaining seasoning.
Don’t forget the sausage.
Once that is added and combined well. Cover the skillet & Simmer for 25 min maximum but 15 more ideal.
Here’s is where you add the honey to bring it all together. Stir it in well now.
