Molds:

INGREDIENTS

500 ml heavy cream
1 vanilla bean
10 gr gelatin
100 gr sugar
coffee

Toppings

100 gr dark chocolate
120 gr heavy cream
or
300 gr berry
150 gr brown sugar
half lemon

INSTRUCTION

Add 10 gr gelatin to a bowl of cold water and soak for 5 mins

take a vanilla bean and split lengthways

pour 500 ml heavy cream into a saucepan

add 100 gr sugar

add the vanilla bean

Stir to combine and bring to a simmer

Take the gelatin out of the cold water and squeeze out the excess, then add to the heavy cream mixture

Stir until completely dissolved

sieve the heavy cream

now if you want a coffee panna cotta add 75 ml coffee for every 250 ml heavy cream

Tip into five molds and place in the fridge to set for at least a couple of hours

Now let’s prepare some topping

in a saucepan put 100 gr dark chocolate and 120 gr heavy cream

stir until well melt to obtain a basic ganache, let the ganache cool a bit

Otherwise you can make a simple berry jam

put 300 gr berry in a frying pan ( i have used frozen berry ) and put 150 gr brown sugar

add half lemon juice and cook for 6 minutes stir frequently

now put the berry and the juice in a food processor and chop finely

Sieve the mixture to separate the seeds and you will obtain a basic and quick berry jam.

Now turn each mold upside-down onto a serving plate. If the panna cotta won’t drop out, carefully dip the mold in a bowl of warm water to loosen it.

Serve with a drizzle of berry jam or chocolate ganache. I personally like panna cotta even without topping
