कुंदरू को धोकर पानी सूखने तक सुखा लीजिये. कुंदरू के दोंनो ओर से डंठल काट कर हटा दीजिये और लम्बाई में 2-4 टुकड़े करते हुये काट लिजिये, सारे कुंदरू काट कर तैयार कर लीजिये.

कढ़ाई में तेल डालकर गरम कीजिये. गरम तेल में जीरा डालिये, जीरा भुनने पर हींग डाल दीजिये, अदरक पेस्ट, हरी मिर्च, हल्दी पाउडर और धनियां पाउडर डालकर मसाले को थोड़ा सा भूनिये और अब कटे हुये कुंदरू डाल दीजिये, सोंफ पाउडर, लाल मिर्च पाउडर और नमक भी डाल दीजिये, और कुंदरूं के टुकड़े को चलाते हुये 2 मिनिट भून लीजिये, सारे मसाले की कोटिंग कुंदरू के टुकड़ों पर आ जाय. सब्जी को ढककर 5 मिनिट पकने दीजिये, और चैक कीजिये.
5 मिनिट बाद सब्जी को चमचे से अच्छी तरह चला दीजिये, और देख लीजिये कि सब्जी जले नहीं गैस धींमी रखिये. सब्जी को फिर से 5 मिनिट ढककर धीमी आग पर पकने दीजिये, और चैक कीजिये, सब्जी को चला दीजिये और अगर आप महसूस करें कि सब्जी अभी पकी नहीं है और इस में पानी डालने की आवश्यकता है तब 1-2 टेबल स्पून पानी डाल दीजिये, और सब्जी को फिर से ढककर 4-5 मिनिट पकने दीजिये.
अब कुंदरू के टुकड़े हल्के नरम हो जायेंगे और कुंदरू का कलर भी बदल जायेगा. सब्जी बनकर तैयार है, सब्जी में अमचूर पाउडर, गरम मसाला और थोड़ा सा हरा धनियां डालकर मिला दीजिये, और सब्जी को प्याले में निकाल लीजिये, ऊपर से हरा धनियां डालकर गार्निस कर दीजिये.
