Thanksgiving is near. And if you are looking for a pie recipe different from the traditional Pecan, Pumpkin, or Apple one, then you should try this Thanksgiving Pear Pie.
I love the fine taste and flavor of pears and pear desserts are so delicate and delicious. So, I have decided to show you how to make a great pear pie from scratch.

Ingredients

Pie crust:
flour 450g.
a pinch of salt
sugar 3 tablespoons
very cold butter cubed 225g.
very cold water 175ml.

Pear filling:

4 large pears *peeled
sugar 150g.
corn starch 30g.
vanilla extract 1 teaspoon
allspice (cinnamon, nutmeg, ginger powder, and cloves) 1 teaspoon
Rhum or similar 1 tablespoon
zest of one lemon

Eggwash: 1 egg and a drop of milk

Instructions:

1. Peel off the pears and cut into small pieces. Mix with sugar, corn starch, vanilla extract, spices, rum, and lemon zest. Then let to rest for 1 hour.
2. Mix the flour with cubed butter, salt, sugar, and cold water. Don’t over mix / knead. Cover with food plastic wrap and let to rest in the fridge for at least 1 hour.
3. Once the dough is cold enough, divide it into two halves. Roll one of the halves and place it on a greased pie tray. Pinch with the fork then place the pears (without adding the liquid).
4. Roll the second dough and cover the pie.
5. Brush with one egg and a drop of milk. Sprinkle some sugar and bake in the preheated oven at 180°C for 45-50 minutes.
