Very simple stracciatella soup recipe that requires a good quality fresh eggs, and freshly grated Parmesan or Pecorino Romano cheese. This italian stracciatella soup is popular in the Lazio region, although many home cooks enjoy it across Italy.
1) Ingredients :
-1.2 l / 6 cups chicken broth,
-3 large eggs
-2 tbsp chopped fresh parsley
-2 tablespoons semolina flour
-1/2 ounce Parmigiano Reggiano
-salt and freshly ground black pepper to taste
-1/4 tsp pinch nutmeg
-olive oil and pepper flakes to garnish
