Hey guys, welcome back to my channel! I’ve been wanting to make Italian Wedding Soup for the longest time and AZ is finally starting to cool up, so I decided to make this delicious soup for you all today! This was my first time making Italian Wedding soup because before this, I had only tried it in a can (Progresso brand), which was one of my go-to’s in college, but now I’m ready for the big leagues (Making the REAL soup!)!! Below will be the ingredients as well as the recipe and tips I have on the soup!

~Chicken Broth Ingredients ~ (RECIPE STARTS @ 02:26)
* 1 chicken carcass (Tip: I got a raw whole chicken & cooked it in the air fryer BUT you can also buy an already cooked rotisserie chicken from the grocery store & go straight to the broth recipe OR if you want to skip both steps, you can just pick up chicken broth from your grocery store & get started on the soup)
* 2 Celery Stalks
* 1 Celery Head
* 2 large Carrots (Tip: If I were to make this again I would only add 1 carrot because when you add two, it makes the broth sweet at first. After a few hours, some of the sweetness went away but I think 1 is good enough)
* 1 Yellow Onion (Cut in half)
* 2 Garlic Cloves (Tip: Make that 4. I didn’t feel like it was garlicy enough & added garlic powder but if * I could go back in time, I would’ve just added more garlic cloves)
* 1 Bunch of Parsley
* 10 Sprigs of Thyme
* 2 Bay Leaves
* Salt & Pepper to taste (When you’re done making the broth and you feel like it’s not chicken-ee enough, you can either cook it longer on the stove for another 2 hours or if you don’t have the time you can add 1-2 tbs of chicken bouillon and it’ll give it that little kick it needed.

~Meatball Ingredients~ (RECIPE STARTS @ 05:31)
* 1/2 ib of ground beef
* 1/2 ground pork (Thoughts: I feel like the meatballs would’ve been better if it was just ground beef only and less breadcrumbs but if that’s how it’s originally prepared & you want to be authentic as possible, go for the beef & pork route)
* 1 tbs olive oil
* 1 egg
* 1/3 cup chopped parsley
* 3 cloves garlic minced
* 1/4 cup grated parmesan cheese
* 1/2 cup Italian breadcrumbs
* Salt and Pepper to taste

~Italian Wedding Soup Ingredients~ (RECIPE STARTS @ 7:19)
1 1/4 cup carrots sliced or diced
1 1/4 cup yellow onion diced
1 1/2 cup spinach
3/4 cup celery sliced or diced
1 tbs minced garlic
2 1/2 tsp Italian Seasoning
20 cups chicken broth
3/4 cup dry asini de Pepe pasta
1 ib of Italian Meatballs
Salt and Pepper to taste
