Today I am going to show you how to make a tropical tiramisu at home.

Tiramisu meaning “pick me up” or “cheer me up” is a coffee-flavoured Italian dessert. It is made of sponge fingers (savoiardi) dipped in coffee, layered with a whipped mixture of eggs, sugar and mascarpone cheese, flavoured with cocoa.

Most accounts of the origin of tiramisu date its invention to the 1960s in the region of Veneto, Italy, at the restaurant “Le Beccherie” in Treviso. The dish is claimed to have first been created by a confectioner named Roberto Linguanotto, owner of “Le Beccherie”

500g mascarpone
300ml heavy cream
160ml coconut milk
140g powdered sugar
4 limes, zested
200g sponge fingers
2 ripe mangos
30g coconut flakes
300ml mango juice
2 limes, juiced

Optional: 4 tbsp coconut rum
