I cooked this in my electric pressure cooker using the slow cooker feature, but you can do it on the stovetop. I sautéed finely diced onion, chopped celery, chopped carrots in extra virgin olive oil. I added my fully-cooked chicken meatballs, tomato paste, canned fire roasted tomatoes, chopped potatoes, bay leaves, salt, pepper, Italian seasoning, onion and garlic powder, fresh oregano and rosemary. I covered it all with chicken broth and some white wine. I slow-cooked it for 2 1/2 hours, added the ditalini pasta and cooked another 45 minutes! I shouldn’t have added all the pasta; it made it thick. No problem tho! I added more chicken broth and white wine! I topped each serving with freshly grated parmesan cheese. Sooooo DELICIOUS!
